Black-Eyed Bean Fritters with Pepper Sauce

Beans are not favourite ingredient for some people. But with the right combination with another ingredients it can give you a delicious taste for your snack. This recipe originally from African American people. They believe that this snack are thought to bring good luck when eaten in a lot amounts on New Year's Day. So we usually find this snack to celebrate new year.


Ingredients :


1 cupful dry black-eyed bean, sorted out, soaked night long,

drained, and rinsed
1/2 medium onion, diced
1/2 cup raw peanuts
1 teaspoonful minced thyme
1/4 teaspoonful cayenne
1 tablespoonful apple cider vinegar
1/4 cup plus 2 tablespoonful water
1 teaspoonful coarse sea salt
1/2 cup finely chopped green black pepper
1 tablespoonful cornmeal
5 cups coconut oil


method :

Get rid of the skins from the beans by adding them together to a large bowl, Fulfilling the bowl with water, shaking the beans, and fishing out the skins that float to the top of the water with a fine mesh strainer. Rinse beans well.

In a food processor fitted with a metal blade, mix the beans, onion, peanuts, thyme, cayenne, vinegar, water, and salt and pulse until completely smooth.
Transfer to a medium bowl, cover it, and refrigerate for 1 hour.
Preheat the oven to 200° F.

Take away the batter from the refrigerator, add the black pepper and cornmeal, and beat with a wooden spoon for 2 minutes.
In a medium-size saucepan over high heat, heat the coconut oil until hot but not smoking, about 5 minutes.
Lower the oil to medium high, and in batches of 5, spoon the batter into the oil, 1 tablespoonful at a time. Fry, stirring around, until golden brown, about 2 minutes. If needed, adjust the temperature to assure that the fritters do not cook too quickly.

Transfer the fritters to a paper towel–lined plate to dry.
Transfer the drained fritters to a baking sheet and put in the oven to keep warm

Serve hot with Hot Pepper Sauce
