Egg Paratha ( Egg Bread )

Egg Paratha. A traditional bread recipe from India. The Indian bread called Roti, usually served with curries or cooked vegetable. Using wheat flour as a base ingredients and cooked on a flat or slightly concave iron griddle ( Tawa ). This Indian Food type is a staple accompaniement to other food ( such as, Spread with butter / Ghee ).


Ingrediets :


2 cups of Wheat Flour

4 whole Eggs

2 medium Onions, chopped

1 Capsicum ( Bell Pepper ), chopped

1 Tomato, chopped

A few strands of Fresh Coriander / Cilantro Leaves ( Hara Dhania ), chopped

1 teaspoonful Red Chilli Powder ( Pisi Lal Mirch )

Salt, to taste

2 teaspoonful cooking Oil

Clarified Butter ( Ghee ) or Butter ( for preparing dough and frying parathas )



Method :


Heat oil in a saucepan

Add the chopped onions and saute onions on medium heat, till golden brown and translucent.

Add the tomatoes and capsicum, saute for a few minutes

Add salt, red chilli powder, and eggs, Mix tell well combined

Saute well till eggs are well done

Add the coriander/cilantro leaves, Stir

turn off heat,d set aside


For the Dough :


Add water to the wheat, mix wel

Knead well into a soft dough

Add 2 tablespoonful clarified butter or butter to the dough and knead some more

Make small balls out of the complete dough

Roll each ball into a round roti.


Lay out one roti on the pan ( flat iron gridle ), cover it with the egg mixture and cover it with another roti. (so basically stuff egg mixture in between two rotis)

Roll it a little and fry both sides well in clarified butter or butter

Tarragon Taste Chicken Roast Recipe

Ingredients :


Whole Chicken ( choose 1,6 - 2 kg weight )

1 medium-sized Onion, finely chopped

4 cloves garlic, minced

100g butter

2 cups of coarse breadcrumbs

1 cup of coarsely fresh tarragon, chopped

1/2 cup of finely ground parmesan

salt and pepper, to taste

extra virgin olive oil, as needed



Method :


Prepare the chicken by removing the neck and trimming any loose skin or fat.

Wipe the cavity and the surface of the bird so it's dry.


For the stuffing :

Gently fry a medium-sized, finely chopped onion and 4 cloves of minced garlic in 100g butter till soften, but not coloured.

Add the onions, garlic and all the liquid to 2 cups of coarse breadcrumbs, half a cup of finely grated parmesan and a cup of coarsely chopped fresh tarragon.


Season with salt and pepper and mix thoroughly.

Insert two fingers under the skin of each breast from the pointy end, the skin should easily detach, leaving a pocket.

Stuff a couple of spoons of mixture in each breast pocket and put the remainder in the cavity


Rub the chicken with extra virgin olive oil

Sprinkle with salt and roast in a preheated 220C oven for 50 minutes, till well done

Serve Hot

Kimbap / Gimbap ( Korean Steamed Rice Roll )

Kimbap ( or " Gimbap " ) is a traditional Korean Food Recipe made from steamed rice combined with many other variation ingredients.
The steamed rice rolled in gim ( sheets of dried seaweed ). Kimbap is usually made for a picnic's or outdoor event's food. It's often serve as a light lunch too. This dish can be served with danmuji or kimchi ( see link " Kimchi " recipe )

Kim/Gim = Sheets of dried seaweed

Bap = White Rice



Ingredients:


4 cups Bap (steamed rice)

4 sheets Kim / Gim ( seaweed sheet, nori )

2 whole eggs

1/2 carrot, cut thin julienne

4 long pieces danmooji (pickled yellow radish), julienne

4 oz beef

8 heads spinach, cut heads, blanch

2 imitation crab meats (6-7 inches length)

1/2 sheet square eomook (fish cake)


For the beef marinade :
1 tsp soy sauce

1/2 tsp sugar

1/2 tsp sesame oil

1/4 tsp minced garlic

sesame seeds

pepper, to taste


For the Vinegar sauce :

1/2 tsp sugar

1/2 tsp rice vinegar

1/4 tsp soy sauce

1/4 tsp sesame oil

1/4 tsp sesame seeds


For the fish cakes sauce :

1/2 tsp soy sauce

1/2 tsp sugar

pepper

2 tbsp sesame oil

1 tbsp sesame seeds


Specific Equipments : Bamboo stick Roller


Method :


preparation :

Beat the eggs and add salt, make a pancake, slice 1/2 inch width


Place the Carrot in a pan, saute with salt


Mach the danmooji to the kim (nori) length


Marinade the beef for about 5 minutes, sauté in a pan


Put the spinach in a bowl, add tiny bit of soy sauce, sugar, and sesame oil. Mix til well combined


Cut the Imitation crab meats in half, lengthwis

Cut the Eomook (fried fish paste) into 1/2 inch width long strips
Boil the eomook sauce, cook eomook to absorb liquid


Cool rice slightly.

Add vinegar sauce, mix well


On a bamboo stick roller, put kim (nori)
Add rice on 2/3 of kim.
Arrange each ingredients on the kim
Roll tight carefully
Spread sesame oil
Sprinkle sesame seeds
Slice 1/2 inch thick with a sharp knife

Tuna Salsa and Tomato Spaghetti

350g Spaghetti ( or another long pasta )
140g can Tuna in brine, drained
500g Fresh tomatoes
1 Red Onion
2 tablespoonful Olive oil
1 Red chilli, halve, deseed, finely chopped


Cooking Direction :

Cook the spaghetti / pasta according to the package instructions

While waiting, Finely chop the Onion and Tomatoes
Heat oil in a large saucepan.
Pour in the chopped onion and tomatoes
Add the chopped chilli
Gently heat through for a few minutes, Stir well

Drain the pasta, add to the sauce
Break up the tuna, add to the pan
season, and toss well

serve this tuna spaghetti for 4

Fresh Tuna Pizza

Fresh Tuna Pizza. A healthy food pizza recipe. It's an easy recipe and quick prepare.
The taste of fresh tuna giving you a delightful dish.









Ingredients :

1 pizza dough roll out to a 10 inch round ( see " Pizza Dough Recipe ")
1 teaspoonful olive oil
400g tomatoes, skinned and sliced
100g Cheddar cheese
200g canned Tuna, drained
1/2 teaspoonful mixed herbs
salt and pepper, to taste
7-10 black olives, stoned


Method :

Preheat oven to 220C / 425F

Brush the Pizza Dough with oil.
Arrange the sliced tomatoes
Sprinkle with half of the cheese

Arrange the Tuna evenly around the outside of the Pizza dough
Sprinkle with the mixed herbs. Season with salt and pepper

Finish with the remaining of cheese
Arrange the olives in a ring near the center of the circle

Brush with oil
Cook in the Oven
Turn the oven heat down to 190C/375C/gasmark5 after 10 minutes.
Cook for further 20 minutes, or till the cheese melted and the pizza golden brown

Serve Hot

Goat Cheese Grilled Pizza

A special Pizza Recipes variation. Goat Cheese Grilled Pizza. We usually cook pizza with oven. But this Italian food recipe gives a Grilled Flavour for the pizza. And the aromatic goat cheese gives you the traditional taste of cheese pizza Italiana.

Ingredients :

1 Pizza Dough ( see " Pizza Dough Recipe ")

1 cup Red Bell Pepper Rings

1 cup Red Onion, Sliced, seperated into rings

2 ounces Herbed Goat Cheese, Crumbled

Cooking spray



Cooking Direction :


Mix the red bell pepper and onion in a small bowl, set aside

Prepare grill.
Place red bell pepper and onion on grill rack coated with cooking spray, grill about 12 minutes or till golden brown. Set aside

Place 1 crust ( pizza dough ) on grill rack coated with cooking spray, grill about 3 minutes or till puffy and golden brown.

Turn crust, grill-ark side up, brush with half of oil mixture.

Top with the grilled vegetables ( bell pepper and onion ) and Goat Cheese
Cover and grill about 5 minutes or till cheese melted and crust is lightly brown

Served Hot

Ingredients :


1 pizza dough ( see Recipe " Pizza Dough " )

1 tablespoonfull Cornmeal

1 cup Oyster Mushroom caps, sliced

1 cup Cremini mushrooms, sliced

1/4 cup Shallots, thinly sliced
1 teaspoonful dried Italian seasoning

/4 teaspoonful Pepper

1/4 cup graound fresh Parmessan Cheese

1/4 cup Fontina or Swiss Cheese, shredded



Cooking Direction :


Preheat oven at 500

Arrange Sliced mushrooms and shallots over dough

Sprinkle with Italian seasoning and pepper

Top with Cheese

Bake till crust is golden brown ( about 10 minutes )


Served hot
