Bakewell Puding

Bakewell Pudding is the most famous pudding in England. It's always easy to prepare,. There are many recipe of bakewell pudding, but it always retain the essence of the traditional recipe of Bakewell Pudding from England.


Ingredients :


225g shortcrust pastry
5-6 tablespoonful raspberry / strawberry / black cherry jam
3 Eggs
115g caster sugar
115g Butter, melted
75 g base Almonds,
dashes of almond essence
Cream, for serving


Method :

Preheat the oven to 200°C/gas 6

Roll out the pastry
Use the pastry to line a 20cm flan tin, trimming and neatening the edges.

Wipe the jam onto the bottom of the case and spread all over with the back of the spoon.

In a mixing bowl, mix and beat the eggs with the sugar till frothy using a hand whisk and then stir in the melted butter and the almonds. Pour a small dash of almond essence.

Spoon this mixture in the pastry case and continue to bake for about 25 minutes or till the filling is set and turn golden brown.

Serve the bakewell tart warm with cream
If you want to serve the tart cool, it also can be topped with a layer of softly whipped cream.
