Lamb Chops with Clams and Sherry

Lamb Chops with clams and Sherry is unique taste of traditional British dish.The combination of the ingredients sure giving you a new taste for your dish.

Ingredients :


The lamb

16 baby lamb Scallops

20ml Olive oil, to fry

2 cloves Garlic, chopped

3 sprigs Thyme


The clams, and sherry
20ml Olive oil

1/2 Onions, chopped

1 clove Garlic, chopped
400gram fresh clams, cleaned
125ml Fino Sherry

100gram cooked Broad beans

1 small handful flat leaf Parsley, chopped


Method :

For the lamb :
preheat the oven to 180C/gas 4
Season the cutlets. Heat the olive oil in a large ovenproof frying pan over a high heat.
Put the lamb cutlets, making sure they are all lying flat in the pan.
Colour on both sides then add the garlic and thyme.
Remove the pan to the oven and roast for about 10 minutes, or until cooked through

For the clams and sherry :
heat the olive oil in a pan and fry the onion and garlic till softened.
Tip in the clams and pour over the sherry. Cover with a tight-fitting lid and cook over a high heat for about 2 minutes or till the shells have opened.
Discard any that stay closed

Stir in the broad beans and flat-leaf parsley
Separate the mixture between 4 warm bowls and top with the lamb chops
Serve with bread for mopping up the juices
