Mexican Salad Tacos

What can be more healthy than salads. Combining lettuce, tomato, onion, and olives for the top of Tacos make this Mexican Food can be categorized as a Healthy Food. The warm and spicy flavour of this food recipe even make this Salad Tacos more special.

Tips : To save time, you can bake the salad shells in the morning and store them covered in the refrigerator

Ingredients :

8 taco salad shells
1 lb ground beef
16 oz tin refried beans
14 ½ oz can diced tomatoes in juice
1 jalapeño pepper, chopped
1 teaspoonful ground cumin
2 garlic cloves, minced
2 red onions, chopped
1 teaspoonful salt, or as needed
3 tablespoonful chili powder
½ head lettuce, shredded
4 tomatoes, chopped
16 black olives, sliced
½ cup grated cheese

For serving :
Lime wedges
guacamole
sour cream


Cooking Direction :


Prepare the taco shells according the instructions of the package. Set aside


Cook the beef, garlic, most of the onions, jalapeño and all the seasonings in the drippings till the beef is browned.
Add the tomatoes, Stir
Remove the mixture to a boil. Turn the heat down, cover, and simmer for 10 minutes

Add the beans, Stir and heat everything through


Divide the meat mixture between the salad shells

Top with the lettuce, tomatoes, olives, cheese, and the rest of the red onion


Serve with the lime wedges and guacamole
Sour cream on the side.
