Chicken Burrito with Corn

Burritos one of the traditional Mexican recipe which quick prepare. It's an easy recipe from Mexican Food. These chicken burrito are a simple flavor but delicious suitable for dinner. The adding of chillis, taco, cheese and corn makes a perfect taste combination.
tips : you can set the chili level as you prefer (if you don't like it too hot)

Ingredients :


3 fresh poblano chilies, seeded and chopped

1 ½ teaspoonful ground cumin

6 flour tortillas

3 tablespoonful olive oil

10 oz Cheese blend, grated

2 cups thawed corn kernels, patted dry

¾ cup red taco sauce

2 teaspoonful chili powder

1 ½ lbs chicken breast halves, Remove all skin and bone. cut into ½ inch thick strips

Salt and black pepper, to taste



Cooking Direction :


Preheat oven to 375 degrees F.


Heat the oil in a frying pan over a medium high heat.


Add the poblano chilies

Sauté for about 3 minutes or till slightly softened.


Add the cumin, chili powder, chicken, and season with salt and pepper

Sauté for a few minutes till the chicken is nearly cooked through


Add the taco sauce and cook for about 1 minute

Add the corn and cook for a further 1 minute


Season again and set aside from the heat


Divide the chicken mixture down the middle of each tortillas with spoon

Fold the sides of the tortilla over the filling and roll them up, enclosing the filling


Spread the Mexican cheese over the top of each burrito

Place them on a baking sheet

Bake till the cheese melted


Serve with fresh cilantro leaves on the side, and some tomato salsa
